Reconsidering Coconut Milk

Of all the wonderful things our fans say about our gelato, there is one remark that we consistently receive from first-time Jöne’s Gelato tasters: “How is it so creamy even though there’s no dairy product?!” The answer to their question is coconut milk.

Coconut milk is one of the most misunderstood kitchen staples. As a product high in saturated fats in a culture deliberately avoiding saturated fats, coconut milk has been deemed as a substance most should abstain from. The most common reasoning is that a large consumption of saturated fats is a leading cause of heart disease.

But don’t let the sounds of “saturated fats” scare you.

Contrary to popular belief, the saturated fats in coconut milk are actually health-promoting. Coconut milk has numerous health benefits, many of which actually come from its high concentration of healthy saturated fats: medium chain triglycerides (MCTs) and lauric acid. MCTs and lauric acid are sent directly to the liver and increase metabolism by acting as a source of energy rather than fat storage. Additionally, the MCTs found in coconut milk kill the three major types of atherogenic organisms -- bacteria that cause plaque formation in the arteries. By killing these plaque-promoting bacteria, these saturated fats in coconut milk decrease the risk of heart disease.
